An exciting, healthy, vegan take on the traditional Lebanese Shawarma wrap. Made with a homemade easy grilled/or baked flatbread (adapted by @thefirstmess) and stuffed with spicy, roasted chickpeas, fresh tomatoes, red onions, dill, parsley, and a homemade garlic dill sauce (adapted by @minimalistbaker). Let your tastebuds soar with this delicious, comforting and oh-so-satisying wrap of all wraps! Guaranteed to be hooked after just one bite 🙂

Ingredients
FOR THE SPELT FLATBREADS (@thefirstmess)
- 3/4 cup + 2tbsp water at 100 degrees F
- 1 teaspoon natural sugar I used Wholesome Coconut Palm sugar
- 1 teaspoon active dry yeast
- 1 cup light spelt flour
- 1 cup whole spelt flour + extra for rolling out
- 1/2 teaspoon fine sea salt
- 1 tablespoon extra virgin olive oil + extra for grilling
- 1/2 cup mixed seeds I used 1/2 teaspoon caraway seeds + 1/4 cup pepitas
FOR THE SHAWARMA'S
- 1 & 1/2 cups organic cooked chickpeas cooled, rinsed, drained and patted dry. (or use (1) 15-ounce can organic chickpeas)
- 1 tablespoon extra virgin olive oil
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon each himalayan pink salt & ground pepper
- 1/4 teaspoon each ground coriander and ceylon cinnamon or use regular ground "cassia" cinnamon
- to your liking fresh tomatoes
- to your liking red onion
- to your liking fresh parsley and fresh dill
- chili garlic sauce/hot sauce of your choice if desired.
GARLIC DILL SAUCE (@minimalist baker)
- 1/4 cup hummus (or tahini)
- juice of 1/2 lemon or 1 tablespoon
- 3/4-1 teaspoon dried dill or substitute with fresh dill
- 3 cloves garlic minced
- 2-3 tablespoons water or unsweetened almond milk, to thin I used So Delicious Unsweetened Coconut Milk
- fine grain sea salt to taste

Recipe Notes
Best when fresh, though leftover chickpeas and sauce will keep well stored separately in the refrigerator for 3-4 days.
Highly recommend to sprinkle cheese of your choice on top before warming up as this just brings these shawarma's to a whole other level!
