Looking into the eyes of this woman I not only see an insanely beautiful face and a killer body. I see the face of a woman who is very much like me. Someone who had a very safe and successful job that treated her well, yet her heart was pushing her towards a new path. One she had discovered herself and one she had never felt more confident about. Taking a scary leap of faith into the unknown, knowing without a doubt she would at least give it a try and put her best foot forward. Believing in herself, trusting her intuition and surrounding herself with people that saw her vision and believed in her. I came across Nicole’s inspiring instagram feed approximately one year ago and immediately connected with how she portrayed herself, her message and of course her gracious ability to connect with people in an honest, simple, healthy way. I love her approach on how important it is to be yourself from the inside out. I also admire her strategic planning towards meal planning, batch cooking, and making a simple road map for the week ahead. Making it easy for anyone and everyone to stay motivated and in the end live a healthy & happy lifestyle day in and day out.
Nicole was kind enough to share one of her famous drool-worthy “Egg White Muffins” recipes with us! They are a quick and healthy protein source not to mention they’re super cute! The muffins below are so low in carbohydrates that she almost always pairs them with pre-cooked Brazi bites (info below*)

Egg White Muffins
- Yield: Serves 4
- Cook Time:
- 2 16oz boxes cage free liquid egg whites
- 1 cup bell peppers – any color
- 1/2 cup chopped parsley
- 1/2 cup shredded Parmesan
- 1 clove garlic or 1 tsp powdered garlic
- smoked paprika
- sea salt/pepper
- Preheat the oven to 350 degrees F. Spray a muffin tin with spray coconut oil.
- Dice bell peppers, parsley, and garlic and toss in mixing bowl
- Add smoked paprika, sea salt and pepper – mix well
- Spray muffin tin with cooking spray and evenly fill each tin with chopped veggies
- Pour liquid egg whites into each tin – 2 boxes should be perfect for 12 muffins
- Top each section with Parmesan
- Bake for 30min
- Let cool and place 3 each in a Ziploc baggie and reheat when needed.
Macro count // 3 Muffins per serving

Carbs – 3 g
Protein – 30g

The sky is the limit with flavor combos! You can ultimately choose whatever veggies and spices you’d like, but be aware that the more veggies you add you do run the risk of the muffins becoming soggy in the fridge. No one wants soggy muffins right?
Here are some of my favorite combos:
- Mushrooms, spinach, turkey bacon or sausage
- Diced Canadian bacon w/mixed veggies
- Broccoli with low fat shredded cheese
- Spinach, tomatoes, feta
