It’s only natural that if something smells good its going to taste good too. If something smells bad, dont eat it! If you are Italian and you’ve been lucky enough to have a Nonno & Nonna who have spoiled you with homemade authentic Italian cuisine, you know the second you walk into there home the aroma is unlike no other. So on a cold Sunday late-afternoon when I looked down and noticed I was still in my onesie pajamas and definitely wasn’t going anywhere I decided to fill my own home with the smell of Italy!
Without getting overly pretty and perfect with my photos I decided to take more of a “raw” approach to this soup, only zooming in and cropping them with no further editing. As you can see each spoonful of this delicious Tuscan inspired soup is filled with hearty green lentils, Italian seasoned vegetables, lots of freshly minced garlic, diced tomatoes, sweet potatoe chunks, fresh herbs and even some fresh swiss chard & lacinto kale straight out of our very own backyard garden!… (Nonna would be so proud :-))
Even though it does seem like a lot of ingredients it is a super simple, enjoyable soup recipe that comes together SO easily! Within 15 minutes you will have a hearty, healthy soup simmering on your stove and that unbeatable Italian aroma filling your entire home!Made with those magical, filling, tiny, green lentils that prove to make “Meatless Mondays” not just all about salads and “rabbit food”. I can guarantee your husbands past comments will disappear after he tries this delicious vegetarian twist on his mothers original meaty Italian soup!
This amazing green legume provides so many health benefits to you and your body. Let’s take one big scoop of soup for example with approximately 1 cup of cooked green lentils in the mix. You have just fuelled your body with a whopping 18 grams of Protein, a very low 1 gram of Fat, 16 whole grams of Fibre, a very high spike of 37% of Iron, and 49% of Manganese! It is also a low calorie legume weighing in at 230 calories per cup cooked…. but who’s counting when its all healthy goodness???
Don’t forget a niiiice slice or two of fresh sourdough bread, some fresh herbs like parsley/basil and of course the star of the show Parmesan! Because really… what would an Italian meal be without it!
