The day widely known as a celebration of Mexican-American culture filled with margaritas, tacos and tons of fun! Not to mention the crazy consumption of Mexican food like guacamole, guacamole and more guac!! What better way to celebrate then with mine and Emily’s all-time favourite go-to guilty pleasure. LOADED NACHO’S! Only this time there not guilty at all because there loaded with veggies, protein AND the best drool-worthy sauce that ever existed! This Cinco de Mayo indulge in these LOADED CAULIFLOWER NACHO’S with Cashew “Cheese” Sauce…. made for 1 but serves 2 🙂
I have a confession… I LOVE chips. No No, not just la-tee dah love chips, I’m talking’ serious, heart pounding, happiness when I hear a bag of chips opening. The only problem with my love for those crunchy, salty, flavourful thin crisps of goodness is I can’t stop eating them. It’s like I get put into some kind of food trance and after counting out how many I should be having in one portion but then taking just a few more, and then just a few more, ok one or two more….. there gone! aaaahhhh.
I have however managed to swing by the good ol’ chip department for over a month! (I know!) A month without my favourite snack, but it hasn’t been bad considering I have many other go-to snacks that are much healthier and wiser to chomp on at 9pm. 🙂
I’ve tried out numerous nacho-like recipes in the past, all plant-based and delicious using homemade crispy sweet potato “chips” or even parsnip and carrot chips with avocado “cream” sauces and homemade salsa’s. As yummy as they have been they never totallllly satisfied my cravings for my cheesy guilty loaded nacho plate pleasure. Until last week when my sweet Emilie created these insanely indulgent Cauliflower “chips”loaded with fresh veggies, beans AND the best part of all a creamy Cashew “Cheese” Sauce that is out of this world!!!
Now that i am officially allergen free of all nuts and haven’t had any form of nacho’s in months I decided it was the perfect time to make this guilt-free, heart pounding, piled high, healthy, nutritious, plant powered dish. Im sure most of you are asking what on earth is that cheesy heaven made of??
- Unsweetened Cashew Milk
- Nutritional Yeast
- Onion, Turmeric and Cayenne Powder
