Today on the blog I’m sharing my very first recipe I ever created and what brought me to the discovery of cooking simple, healthy, delicious, feel-good meals! It’s time to get COZY up in here! I think you’re going to love it.
I first discovered my passion for cooking 3 years ago when I began to totally cut out any processed foods, sugars, gluten and red meats. I should mention I was not an unhealthy eater by any means! However I did not steer clear of any of these foods when and if they were readily available for me to indulge in!
I was always very active and in some-what decent shape but I wasn’t feeling good…. I felt very bloated and my energy just wasn’t what it should have been. My skin would break out a lot and I just didn’t feel as healthy as I could be! Being only 25 years old and always looking for new ways to challenge/and or better myself I decided to totally go “cold turkey” and cut out all of these things from my diet.
I found myself constantly searching “healthy recipes” on Pinterest and Instagram with the mind-set that in this day and age there must be so many amazing healthy products and food choices out there! Wanting to discover them all, my excitement would rise from week to week as I would continue to test out recipes from “foodies” all around the world. I cannot even explain how obsessed I became at scrolling and pinning these unbelievably beautiful food photos without knowing how much work and talent went into each and every one. They all looked too good to even be real!!
So after a year or so when Jordan and I got engaged and the wedding planning began I decided to go all in, 100 percent clean, wholesome, nutritious, homemade foods and nothing less! That’s when I started to see and feel BIG change. In every way. I then started to follow certain food bloggers recipes, connecting to certain styles and the simplicity and nutritional values behind each & every ingredient. How certain spices, herbs, seeds, legumes, grains, vegetables, fruits, and organic protein could cure you both internally and externally just blew my mind! I loved the vibrant colours, the new smells, tastes and most of all how simple it really was to eat clean 24/7!
I will never forget that moment… the moment when I told myself how proud I am that I made that switch. I connected with who I really am, who I have grown into being and most of all the best version of myself I could possibly be. So long story short, I started to dig deep, discovering ways to tweek my all-time favourite dishes so that Jordan and I could enjoy them all in the healthiest way possible. To my surprise it was never a difficult task and whatever changes I made honestly it always tasted better the healthier way anyways! And even more so to this day!!
With that said this Creamy Cauliflower Soup was my first recipe I began re-working (or twerking as Miley would say!) originally containing bacon, butter, all-purpose flour, dairy milk and chicken broth. Now containing ingredients like unrefined coconut oil, spelt flour, vegetable broth, unsweetened non-dairy milk, garlic, onion, carrots, celery and of course the star of the show Ms. Cauliflower herself 🙂 So please, go ahead and try this amazingly delicious cozy soup that I guarantee will fill up the tummies of you and your family and have them begging for more!
