NYE is just around the corner and I’m really looking forward to ringing in 2017 with my husband and a beautiful girlfriend of mine, in the comfiest clothes I own, completely at ease in the comfort of my home with a crazy amount of sushi being consumed Japanese style sitting on down-filled pillows on the living room floor… Life seriously couldn’t get any better.
As I sit here and reflect on this past year I think of all of the positive changes, success’s, proud moments, and personal growth I have seemed to hurdle through and accomplish. There are of course those not so pretty moments too, the ones I thank my husband for everyday as they required some extra TLC that I definitely could not handle on my own. All in all, this past year has been one to remember in so many ways! (I will share more in detail on my next post so stay tuned!)
If your looking for a last minute, unique yet easy meal to WOW your guests for NYE, then this flavourful & delicious creamy wintery dish is for you! I must say it’s a really fun dish to make too! It may not be the most appealing looking with the deep red saucey tones and its not a recipe for everyone but it really is a different way of eating such a wonderful winter vegetable!
The beets are grated for ease of use (and helps to contain the mess) then cooked with the red lentils. The red lentils, when cooked long enough, start to break down and form a creamy base. In the end, your left with a steaming hot bowl of perfectly cooked rice topped with a super creamy beet & lentil sauce that make your tastebuds smile 🙂 Thats why I’m so in love with @naturallyella and all of her flavourful, unique, healthy, colourful dishes that are always so fun to make!
