- 24 pitted deglet noor dates *can be substituted with 12 large Medjool dates, pitted
- 2 cups BOB's gluten-free rolled oats
- 2 tablespoons chia seeds
- 1 tablespoon ground flaxseed
- 1/2 teaspoon fine grain sea salt & pepper *I like to buy mine in bulk from Bulk Barn
- 1/3 cup fresh lemon juice
- 1 tablespoon pure maple syrup
- 2 teaspoons pure vanilla extract
- 1 1/2 teaspoons ground turmeric
- organic unsweetened coconut flakes for dusting

First, blitz the dates on high in a food processor for 15-20 seconds.
Then add the rest of the ingredients and blend on high until everything is combined and a soft dough forms.
Scoop out 1 heaping tablespoon (or more if you want them bigger) and roll them into bite sized balls.
Store them in an airtight container in the fridge for a week.
Energy balls will keep up to 3 months frozen in the freezer.
