We all have obsessions with certain types of food. Cravings for that specific flavour, texture, and taste and loving the comforting feel of knowing its satisfaction will be delivered every single time. Moments of “I wish I could just sink my teeth into (you)… right about now”. Counting down the hours, minutes and seconds before your finally gazing into the eyes of your all time favourite recipe, whether it be breakfast/lunch/dinner or an everyday snack or dessert. For me, it is hands-down, no doubt, always will be, Breakfast. Specifically anything and everything to do with FIGS. So when I came across this OVERNIGHT FIG & BLUEBERRY BIRCHER MUESLI recipe on Instagram I absolutely HAD to give her a try.

She is truly an inspiration and I am loving listening to key advice on not only how to build my blog and eventually begin to prosper it as a business, but also how to feel good about myself both mentally and physically. Creating balance in my everyday life and reminding us all that everyday really is a gift with so much potential to do something amazing. Whether that be doing extreme seemingly impossible things, to sleeping in an extra hour and attending a yoga class, relaxing and diving into a good book. So back to this Muesli… I know time is a precious thing for everyone, everyday. And I also know eating a healthy breakfast isn’t always easy for some people because they feel they don’t have the time to prepare one. I also know we all have 5 minutes each day that we can set aside to throw a few healthy raw ingredients into a jar and let the lovely Chia seed do its magic. Chia, also known as a “superfood,” or a food packed full of nutritional benefits contains about 136 calories per ounce and is loaded with protein, fiber, calcium, antioxidants and omega-3 and -6 fatty acids. These tiny amazing seeds absorb up to 12 times its own weight. When soaked in water or milk, it forms a “gel” layer around each seed and “plumps up,” making it a great thickening agent in recipes such as this one, chia puddings and beverages such as smoothies. It is recommend to include one ounce of chia per day into our daily diet. Another reason to make this super yummy, super easy, gluten-free, dairy-free, vegan breakfast today!
This recipe calls for raspberries, blueberries and figs, however if you want to swap out one or all of these fruits for ones YOU crave and enjoy most please do! My favourite toppings also include a dollop of sunflower butter, a sprinkle of hemp seeds, cacao nibs, a drizzle of raw honey and a few coconut flakes for extra crunch 🙂
