If your anything like me you’ll be holding your hands ever so close to your heart as you bite into this chewy, gooey, comforting, pumpkin-filled muffin topped with a simple, homemade 6 ingredient granola! A genius approach to muffin making when you end up with both Muffin AND Granola and not even meaning to! –(insert biggest smile EVER!)–
OK before I even begin this blog post I have to be honest… I literally just devoured I mean DEVOURED two entire bowls of this homemade granola with just straight up good ol’ non-dairy milk and OMG its seriously so insanely delicious and refreshing with the perfect crunch and sweetness and MMM MM MMM goodness allll around. Obviously the first bowl just wasn’t enough! Now I’m crazy full and can’t move so excuse me while I go on and on about how ridiculously yummy these recipes are and how you shouldn’t wait another minute to whip em’ up!
With literally only a few ingredients and under 20 minutes this “AH-HA” moment can happen to you, before your eyes, and your suddenly whisked away into Granola Heaven where all you can see for miles and miles are clusters of oats, coconut, pumpkin seeds and ouuuu do you smell that? the sweet sweet smell of pure maple syrup… Ok now I need to go and pour myself a third bowl! This is getting way too tempting 🙂
Think of freshly homemade coconut pumpkin Granola packed into a chewy, gooey, pumpkin spice filled muffin…………… Keep thinking……………. A little more…………….. Literally everything about it is on point! #1. So as I did put both of these recipes together they can obviously be made completely separate as well just by making the muffins and adding the raw granola ingredients into the batter then sprinkling them with just a little extra seeds and oats on top before baking.
