RASPBERRY VANILLA OVERNIGHT OATS
Using a blend of raspberries and the complimenting sweet taste of vanilla I have created this 5 minute, gluten-free, dairy-free + vegan overnight oat recipe that literally tastes like summer in a jar.
Raspberry Vanilla Overnight Oats

Prep Time 5 minutes
Cook Time 8 hours (to soak)
Passive Time 8 hours 5 mins

Raspberry Vanilla Overnight Oats
Instructions
  1. Place rolled oats, coconut milk, raspberries, chia seeds, vanilla extract and protein powder in a medium - large size mason jar. Stir until everything is mixed together and oats are covered in liquid.
  2. Place top on and shake vigourously. Divide the mixture into 2 servings in smaller mason jars with tight fitting lid. Refrigerate overnight, or at least 5-8 hours.
  3. In the morning, stir in extra coconut milk to loosen up the oats and to get the consistency you like. Stir in almonds and more raspberries and a drizzle of almond butter.

  • These can be made up to 3 days ahead of time.
  • Will last in the fridge for up to a week.
