Ingredients

  1. In a large bowl, combine the flour, baking powder, baking soda, salt, ginger, and cinnamon. Set aside.
  2. Separate eggs and place egg whites in a medium bowl. Set aside yolks in a larger bowl. With a handheld electric mixer, beat egg whites on high speed until soft peaks form. Set aside.
  3. In a large bowl, beat egg yolks with melted coconut oil, molasses, yogourt, milk, and vanilla until smooth. Fold flour mixture into liquid until just combined. Very gently fold in whipped egg whites and chocolate chips. Add a sprinkle or two extra spelt flour if dough seems to wet.
  4. Cook waffles on a waffle iron, according to manufacturers instructions until waffles are golden brown. Serve immediately with maple syrup.
Recipe Notes

I like to enjoy my waffles with a dollop of plain yogourt and some caramelized bananas!

To make quick caramelized banana’s :

Heat a small skillet over medium-high heat and spray with coconut oil. Break off about ā…” of yourĀ banana, slice it into smaller pieces then cut each piece in half lengthwise (so that theĀ bananaĀ seeds are exposed in each piece). Cook theĀ bananas seed side down until the bottoms turn golden brown.
Ā *Also these waffles can easily be kept in the freezer for approximately 2 months.Ā To freeze, place a sheet of wax paper between each waffle, then wrap waffles tightly in aluminum foil or place in heavy-duty freezer bag.
