Adapted and Inspired by the ever-so-talented “Abbey’s Kitchen” this delicious paleo chicken curry with cauliflower and sweet potatoes has become one of my favourite gluten free one pot meals! Incorporating Indian spices like ginger, curry powder, cumin, coriander and cayenne definitely making this dish BURST with flavour. Add in your veggies and some lean meat and call it a day! I strongly recommend serving this dish over a 1/2 cup cooked brown rice or quinoa! Helps to soak up the delicious sauce and flavour of the dish. I also recommend dunking a slice of your favourite bread into it as well! My husband and I thoroughly enjoy it with fresh sourdough 🙂
