These easily digestible, healthy waffles are super easy to make and even more enjoyable to eat. You can whip them up in under 30mins and swap the blueberries for whatever fruit or veg you want! Seal up any extra's and place in the freezer so that you can pop them in the toaster to enjoy in just a few minutes at a later date!

Ingredients
Waffles
- 2 cups whole spelt flour or white/wheat mix
- 2 teaspoons baking powder
- 2 tablespoons ground flaxseed
- 1/2 teaspoon cinnamon
- 1 cup fresh/or frozen blueberries can be substituted with any fruit or veg of choice
- 2 cups almond milk i used unsweetened "So Delicious" coconut milk
- 1/4 cup melted coconut oil
- 2 tablespoons maple syrup plus extra for serving
- sea salt
- blueberry compote if desired
- cacao nibs if desired
- greek yogourt if desired
Blueberry Sauce
- 1 cup fresh/or frozen blueberries i try to use frozen
- 2 tablespoons + 2 teaspoons filtered water
- 1 tablespoon raw honey
- 1 tablespoon lemon juice
- 1 tablespoon arrowroot starch/flour mixed with 1 tbsp water, set aside for 5mins
