People ask me all the time… “What would you say has been the biggest change since you’ve been married?” and with that question I always seem to light up and smile saying “I now get to call my best friend my Husband and its the best feeling in the entire world”……. Your probably thinking what the heck does this scenario have to do with this waffle post! Well… I’ll tell you!
Rewind back to this past December. It was our first Christmas Eve morning as Mr & Mrs and suddenly a light went off in my brain (not an everyday occurance!)…….. I realized that “first times” dont come around every day and so I wanted to end off our wedding year and begin a new one with traditions! Because in my opinion you can never have too many traditions! They are always something to look forward to, especially when you are grateful enough to share them with someone you truly love. And besides, what would a birthday be without a birthday cake?……..or even worse a birthday cake without candles….
So with Christmas came a few too many wonderful, thoughtful gifts from my amazing (now) husband under the tree including the extra spectacular LOVE & LEMONS Cookbook! Honest to goodness I still haven’t been able to put it down. Jeanine and Jack are so inspiring with there “apple-to-zucchini” genius approach on setting up a uniquely, easy-to-use cookbook that grabs your attention with every turn of the page. As I flipped through there “vegetable alphabet” as I like to call it, I eventually came across “CARROTS” and instantly narrowed in on the recipe.
VEGAN CARROT WAFFLES 🙂 Those 3 words did for me! Made with some of my favourite “go-to” ingredients including Organic Spelt Flour, flaxseed, cinnamon, coconut oil and 100% pure maple syrup. I knew even though this Spring/Fall recipe called for Carrots it could easily be substituted with really any fruit or vegetable in season! After discovering this drool-worthy recipe I knew it would be a hit in our home and immediately without even trying them yet made a pack with my husband that friday mornings would forever be…. WAFFLE FRIDAY 🙂 OR FRI-“YAY” as we like to call it!! This is the waffle maker I’m currently using and loving it. Oster Belgian Waffle Maker <— best $30 you’ll ever spend! take my word.
So today with a few pints full of in season locally grown blueberries I whipped up yet another batch of my favourite L&L waffles! Then using a cup of frozen blueberries, some lemon juice, raw honey, a few tablespoons of water and some arrowroot flour I created a delicious BLUEBERRY COMPOTE which really was an extra added bonus to these already fluffy, delicious friends of mine. Lather it on your waffles, pancakes, desserts, chia puddings, toast or skip the lathering step and place it directly onto your tongue instead! Either way…. enjoy this wicked waffle recipe year round!
